In business since 1963, this small restaurant serves up one of Japan´s most famous dishes that is a huge part of Hawaiian culture: Saimin noodles. The House of Saimin, located in Lahaina, West Maui, has room for few clients but is big on flavor. In the dish known as saimin, saimin noodles are served in dashi broth with garnishes such as eggs, scallions, various conserved meats, and vegetables. This dish echoes the cultural mixture in Hawaii, joining together the Japanese fondness for noodles in broth with noodles of Chinese origin and ingredients from cultures like the Philippines, Portugal, and Polynesia. Hawaiians treat Saimin noodles more like a snack than a meal. There are vegetarian options available, but the noodles themselves contain eggs and the broth contains fish flakes.

The restaurant stays in business even though it has short business hours, open only from 11am to 2pm and then from 6pm to 11pm. It is closed Sundays and Mondays. No reservations are required.
